Wilted Kale Super-Salad Salad: •4 cups kale, finely chopped •1/2 cup dried cranberries or 5–6 sundried tomatoes, finely chopped •1 small beet, grated (approx 1 cup) •1 small carrot, grated (approx 3/4 cup) •1/4 cup pine nuts or walnuts, roughly chopped Dressing: •2 tbsp balsamic vinegar •2 tbsp lemon juice •2 tbsp oil (olive, flax, hemp, etc.) •1 tsp maple syrup •1/4 tsp salt •1/4 tsp ground black pepper Add 4 cups finely chopped kale ,1/2 cup dried cranberries , 1 small grated beet , 1 small grated carrot , 1/4 cup pine nuts or walnuts into a large bowl and set aside. In a small bowl, whisk together dressing ingredients. Toss dressing in with salad and set aside. Let salad sit for 30–60 minutes, re-tossing every 10 minutes
